The estate is located on the edge of the small Provencal village of Sablet, west of the Dentelles de Montmirail, near Vaison la Romaine. It is at the crossroads of the most beautiful wine routes and not far from the Mont Ventoux, it is an essential stopover in the Rhône Valley.
The grapes are destemmed as soon as they arrive in the cellar. The Syrahs are vinified separately from the Grenaches.
The wine has a beautiful ruby colour, bright and clear. The nose is young with accents of red and black fruits with aromas of liquorice and violet. It is a round, supple wine with a lot of freshness.
Serve it with rabbit, lamb or Mediterranean cuisine. Ideal with a barbecue.
Passionate and committed, Thibaut converted his vineyard to organic farming and obtained certification in 2014 – Certified Organic Wines FR BIO 10.
The soils are worked in depth to favour the expression of the terroir, to decompact and favour microbial life and thus the expression of the terroir.
The result of this special attention to the vines is small yields that are lower than the regulatory yields for each appellation.
Thanks to a spacious cellar and a traditional vat room, Thibaut explores the potential of each plot of land and each grape variety.
